Ingredients for 1 servings:

  • 225 g butter
  • 125 g powdered sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 190 g flour
  • 80 g chips, potato, crumbled, preferably low in salt
  • 120 g walnuts, chopped, optional
  • Powdered sugar, for dusting

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Potato Chip Sugar Cookies

Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit), bottom heat if possible, otherwise top/bottom heat. In a bowl, cream the butter and sugar with a mixer until light and fluffy. Add the vanilla extract and egg yolk. Gradually add the flour, stirring continuously. Then add the potato chips—and walnuts, if using—and mix well. Line a baking sheet with parchment paper. Using a teaspoon, scoop out small heaps of dough and place them on the baking sheet, flattening slightly. Place the baking sheet in the oven and bake the cookies for 15 minutes. Remove the sheet from the oven and dust the warm cookies with powdered sugar. This dough yields approximately 24 cookies.
