American Pulled Turkey – from the oven

Ingredients for 1 servings:

  • 1 small onion(s), red
  • 2 kg turkey (turkey thigh)
  • 1 tbsp chili powder
  • ¼ tsp cumin powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper
  • 125 ml ketchup
  • 250 ml chicken broth
  • 60 g brown sugar
  • ½ tsp beet syrup or molasses
  • 2 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • hamburger bun
  • coleslaw
  • Pickle(s)

Working time approx. 30 minutes; Cooking/baking time approx. 4 hours 30 minutes; Total time approx. 5 hours

Remove the skin from the turkey legs. Peel and chop the onion and place it in a roasting pan or large pot. Preheat oven to 130°C, using only bottom heat if possible, or top/bottom heat if necessary. Rub the turkey legs with chili powder, cumin, salt, pepper, and cayenne pepper and place on top of the onion. Mix the ketchup, chicken broth, sugar, beetroot syrup or molasses, mustard, and Worcestershire sauce in a bowl and pour over the turkey legs. Place the lid on the roasting pan/pot—very important—and place it in the center of the oven. Leave the turkey legs in the oven for 3 1/2 to 4 1/2 hours. After 3 1/2 hours, check whether the meat can be pulled apart easily. If it’s still difficult to pull apart, leave the legs in the oven for another hour. Then remove the turkey thighs from the oven and place them on a cutting board. Using two forks, pull the meat apart, removing the bones. Return the meat to the roasting pan/pot and toss with the sauce. Add the 1 tablespoon of apple cider vinegar and season to taste. Spoon the pulled turkey into hamburger buns and serve with pickles and/or American coleslaw.
