Sweet-and-Sour Green Beans – outstanding!
In a skillet, cook the bacon pieces and onion on the stovetop over medium heat, stirring frequently, for 6 to 8 minutes; the bacon and onion should be golden brown. Remove the bacon/onion mixture from the skillet and drain on a paper towel, leaving any rendered fat in the skillet. Add the green beans to the skillet and cook in the bacon fat over medium heat for 8 to 10 minutes; they should be tender but still have a bite. Add the vinegar, sugar, and bacon mixture; mix everything well, then simmer for another 3 minutes, stirring frequently. Season with salt and pepper, arrange on a platter, and serve. This dish goes well with all kinds of meat, poultry, and potatoes.
