Ingredients for 4 servings:

  • 1 cucumber(s), large, diced
  • 3 tomatoes, diced
  • 1 carrot(s), diced
  • 1 bell pepper(s), red, diced
  • 1 bell pepper(s), green, diced
  • 1 onion(s), chopped
  • 3 cloves garlic, crushed
  • ¼ tsp ground cumin
  • Salt
  • 1 lemon(s), juice
  • 1 tsp vinegar (white wine vinegar)
  • 3 tbsp oil (olive oil), extra virgin

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine the vegetables with the onions and garlic in a bowl. Add the cumin, salt, lemon juice, vinegar, olive oil, and herbs and mix well. Season to taste and refrigerate until ready to serve.
