Andy's bulgur with leek and zucchini

Ingredients for 2 servings:

  • 2 m.-large zucchini
  • 2 stalk(s) leeks
  • 1 cup bulgur
  • 200 ml vegetable stock
  • 4 Pepper
  • 4 tbsp soy sauce
  • chili powder
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Chop the leeks, zucchini, and peppers and cook them in a pot with soy sauce for 5 minutes. Then add the vegetable stock and bulgur, season generously with salt, pepper, and chili. Simmer for about 10 minutes until the liquid is absorbed. Serve immediately. It also tastes great sprinkled with Parmesan cheese.
