Annis Strong Bean Soup

The perfect annis strong bean soup recipe with a picture and simple step-by-step instructions.

  • 2 45 ml cans White beans
  • 200 g Carrots
  • 200 g Leek
  • 400 g Potatoes
  • 100 g Onions
  • 8 Cabbage sausages or meatballs; thin
  • 2 tbsp Olive oil
  • 1 Jar á 425 ml Chopped tomatoes
  • 2 tbsp Vegetable broth
  • 2 tsp Oregano
  • Salt
  • Pepper from the grinder
  1. Cut the cabbage sausages into thin slices. Peel the carrots and cut into thin slices. Clean and wash the leek and cut into rings. Peel onion and chop finely. Peel, wash and cut the potatoes into small pieces.
  1. Heat the oil in a large saucepan. Briefly fry the cabbage sausage slices and onion. Add the carrots, leek and potatoes. Pour in 750 ml of water, stir in the broth and oregano and bring to the boil. Cover and simmer for approx. 15 minutes.
  1. In the meantime, pour the beans into a colander and rinse with cold water. Add the beans and tomatoes with their juice to the soup, bring to the boil again and continue to simmer for about 5 minutes. Season the soup with salt and pepper.
