Ingredients for 2 servings:

  • 6 red bell peppers
  • 4 garlic cloves
  • 1 tbsp vinegar (Italian red wine vinegar)
  • 1 tbsp olive oil
  • ½ bunch parsley
  • Salt

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Place the peppers, standing upright, on a baking sheet and roast in the oven at 175 degrees Celsius for about 20 minutes. Turn them a few times during the roasting to help the skins come off. Let them cool slightly, then peel and core them. Cut them into smaller pieces and season with salt. Marinate them in a lidded bowl with the vinegar and oil. Finely chop the parsley and stir in. Let them cool completely.
