Apple and almond muffins

Ingredients for 1 servings:

  • 1 apple
  • 1 egg(s)
  • 4 tbsp sugar
  • 1 tbsp oil
  • 4 tbsp flour
  • 1 tsp baking powder
  • 4 tbsp almonds, grated
  • lemon juice
  • Cinnamon

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

For 6 muffins

Peel, core, and grate the apple, drizzle with a little lemon juice, and sprinkle with cinnamon. Beat the egg and sugar until very fluffy, then add the oil while stirring. Combine the flour and baking powder and mix into the batter. Finally, fold in the grated apple and almonds. Fill 2 tablespoons of batter into each muffin cup and bake at 180°C for about 18-20 minutes. Enjoy warm!
