Ingredients for 2 servings:
- 2 m.-sized apples
- 2 m.-sized eggs
- 2 tbsp sugar
- ½ packet of vanilla sugar
- 65 g butter, soft
- 125 g flour
- ½ pack of baking powder
- 1 pinch of salt
- 200 ml mineral water
- 2 cl syrup (apple syrup)
- 4 slices of Black Forest ham
- some fat for frying
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour
Peel and core the apples, and cut into 3-5 mm thick slices. Separate the eggs. Beat the egg yolks with the sugar and softened butter until frothy. Mix the flour with the baking powder. Add the flour-baking powder mixture and gradually add the mineral water and apple syrup. Beat the egg whites with a pinch of salt until stiff peaks form and fold in. Let the batter rest for 1/2 hour. Heat fat in batches in a small 20 cm diameter pan and, one at a time, fry the batter into golden brown pancakes. Arrange the apple slices on top of the batter. Distribute the ham over the pancakes and serve.
