The perfect apple cake with caramelized walnuts, for 135th anniversary. recipe with a picture and simple step-by-step instructions.
Dough :
- 250 g Sifted flour
- 125 g Butter
- 75 g Sugar
- 1 Pc. Egg
- 1 tbsp Water
Covering:
- 1,2 kg Apples
- 4 tbsp Lemon juice
- 2 packet Vanilla sugar
- 300 g Sour cream
- 125 g Sugar
- 5 Pc. Eggs
- 2 cl Apricot liqueur
- 20 g Food starch
Caramelize:
- 50 g Butter
- 50 g Sugar
- 50 g Liquid cream
- 150 g Walnut kernels
Dough :
- Knead flour, butter, sugar, egg & water to make a shortcrust pastry.
Apples:
- Peel, quarter and core the apples and cut into wedges. With lemon juice + 1 pack. Mix the vanilla sugar.
Springform pan: 26 cm
- Grease the spring form!
- Put the flour on the worktop, roll out the dough to a diameter of approx. Layer the apples.
- Mix the sour cream, eggs, sugar, 1 piece of vanilla sugar, apricot liqueur from the Wachau + starch. Pour over the apples. Bake the bottom rack at 175 ° C for approx. 35 minutes.
Caramel :
- Bring the butter, sugar, cream to the boil, fold in the nuts, let cool down briefly, spread on the cake + bake for another 25 minutes. I covered the last 12 minutes with aluminum foil. Allow to cool in the mold.
- Once it has cooled down, open the springform pan and remove the edge.
