Apple compote with cantuccini

Ingredients for 4 servings:

  • 800 g apples
  • 200 ml apple juice
  • 2 tbsp sugar
  • 1 ½ cups cream
  • some vanilla sugar, real
  • 1 bag of cantuccini or other biscuits
  • 8 cl port wine or egg liqueur

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes

Slice the apples. Cover and simmer the apple slices, apple juice, and sugar for about 8-10 minutes. Let the compote cool. Whip the cream with vanilla sugar until stiff. Roughly crumble the biscuits. Layer the apple compote, cream, and biscuits alternately in glasses or bowls, drizzling the biscuit crumbs with port wine or advocaat. Refrigerate for 1 hour.
