Ingredients for 4 servings:

  • 1 kg apples, sour
  • 750 ml apple juice, naturally cloudy
  • 1 lemon(s), untreated
  • 1 stalk(s) cinnamon
  • 75 g sugar
  • 45 g cornstarch

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel, quarter, core, and dice the apples. Bring the apple juice, lemon zest and juice, cinnamon stick, and sugar to a boil. Cook the apple cubes in batches until just tender (careful, this happens quickly). Remove the apple cubes from the liquid. Mix the cornstarch with a little cold water to thicken the liquid. Add the apples and let them cool. Serve with either whipped cream or warm vanilla sauce.
