Ingredients for 18 servings:
- 2 apples
- 200 g sugar
- 100 g cranberries, chopped
- 100 g carrot(s), grated
- 100 g walnuts, chopped
- 350 g flour
- 1 tbsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 tsp cinnamon
- 2 eggs, whisked
- 100 ml oil
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Combine apples and sugar in a bowl. Gently fold in cranberries, carrots, and nuts. Combine the dry ingredients and stir into the apple mixture. Whisk the eggs and oil and stir into the remaining ingredients. Fill 18 muffin cups two-thirds full and bake at 180°C (160°C fan-assisted) for 20-25 minutes. Let cool for 5 minutes after baking, then remove from the pan.
