Apple cream cake

Ingredients for 1 servings:

  • 300 g flour
  • 150 g butter or margarine
  • 120 g sugar
  • 1 egg(s)
  • 1 lemon(s), (peel)
  • 1 tsp baking powder
  • 500 ml milk
  • 3 tbsp flour
  • 4 tbsp sugar
  • 2 egg yolks
  • 1 packet of vanilla sugar
  • 2 apples
  • 1 lemon(s), the juice
  • some powdered sugar

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

For the dough, put all the ingredients in a bowl and knead into a smooth dough. Wrap in cling film and refrigerate for at least 30 minutes. For the cream, put 2 egg yolks, sugar, and vanilla sugar in a bowl and whisk to combine. Alternately add 1 tablespoon each of flour and milk and whisk until creamy. Heat the remaining milk, but do not boil it, then whisk in the egg mixture. Bring everything to a boil while stirring until the mixture is firm. Remove from the heat and let cool. Peel and quarter the apples, remove the cores, and quarter them. Cut the quarters into thin slices and drizzle with lemon juice. Line a springform pan with baking paper and spread the dough into it, pulling up an edge. Spread the cream over the dough and smooth it down. Arrange the apple slices in rounds on top of the cream, like roof tiles. Bake in an oven preheated to 180°C for about 40 minutes. Dust the cooled cake with powdered sugar before serving.
