Apple Cupcakes

Ingredients for 12 servings:

  • 200 g brown sugar
  • 1 tsp vanilla sugar
  • 120 ml oil
  • 2 tsp cinnamon
  • 2 eggs
  • 250 g flour
  • 1 packet of baking powder
  • ½ tsp salt
  • 2 m.-sized apples
  • 100 g cream cheese
  • 50 g butter, soft
  • 1 packet of vanilla sugar
  • 100 g powdered sugar

Working time approx. 30 minutes; Total time approx. 30 minutes

Delicious as muffins even without icing

For the batter, whisk together the brown sugar, vanilla sugar, oil, and cinnamon. Beat in the eggs one at a time. Mix the flour, baking powder, and salt in a bowl and slowly stir into the wet ingredients. Finally, fold in the peeled and finely chopped apples. Line a muffin tin with paper cases and fill them evenly with the mixture. Bake at 180°C for approx. 20-30 minutes. For the topping, sift the icing sugar and whisk well with the cream cheese, vanilla sugar, and butter. Refrigerate until ready to use. Remove the cupcakes and let cool. Either spread the topping on the muffins with a knife or pipe it in a circular pattern from the outside in using a piping nozzle. If you like, you can omit some of the cinnamon from the batter and sprinkle each cupcake with a touch of cinnamon later.
