Apple curd casserole

Ingredients for 4 servings:

  • 100 g butter or margarine
  • 100 g semolina
  • 500 g quark, low-fat curd cheese (low-fat quark)
  • 150 g sugar
  • 3 eggs
  • 1 packet of vanilla sugar
  • 400 g apples
  • some lemon juice
  • 15 g breadcrumbs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Separate the egg yolks from the egg whites (there should be no egg yolk in the egg whites (!) otherwise the fluffy texture won’t work). Heat 50g of butter or margarine and beat with the sugar until fluffy. Stir in the semolina, curd cheese, egg yolks, and vanilla sugar. Wash, peel, and core the apples. Cut into small slices and immediately stir into the curd cheese mixture (to prevent the apples from browning). Season to taste with a little lemon juice. Beat the egg whites until stiff peaks form and fold into the casserole mixture or stir gently (they must be fully incorporated into the mixture and not float to the top!). Pour the curd cheese or quark casserole mixture into a greased casserole dish. Sprinkle with breadcrumbs and scatter butter flakes (approx. 20g) on ​​top. Bake in a preheated oven until golden brown (35-40 minutes at 200°C = Gas Mark 3).
