Ingredients for 1 servings:
- 1 large apple, pitted, peeled, cut into small pieces
- 40 g quark
- 100 g banana(s), approximately, but not more!, mashed/pureed
- 100 ml milk
- 250 g flour
- ½ pack of baking powder
- 1 tsp, sautéed cinnamon, optional
- 1 tsp, desiccated coconut, optional
- 1 clove(s), crushed, optional
- some raisins, cranberries or other dried fruits, optional

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
dry, but super fluffy and not crumbly or brittle, makes about 14 cakes
Set the oven to 200°C (top/bottom heat). Place the banana in a bowl. Then mix the flour with the baking powder and add it, mixing it in with the banana as well as possible. Now add the quark and knead into a lump, then pour the milk into the bowl and finish kneading the dough. It will be a bit sticky at this point, but that’s how it should be! Add the apple and, if desired, the optional ingredients, or add a little something extra to each formed roll. Form small balls from the dough, each no larger than a partially filled hand. Place on a baking sheet lined with baking paper. I usually make 14-16 balls. Now place the baking sheet in the preheated oven and bake the rolls for 25-30 minutes. Caution: Don’t let the rolls get too brown! I don’t add any sugar, as the banana provides enough sweetness; if you like, you can add more.
