Apple Lattice Cake

Ingredients for 1 servings:

  • 300 g flour
  • 200 g butter
  • 175 g sugar
  • 1 egg(s)
  • 1 lemon(s)
  • 1 kg apples, sour, crumbly (e.g. Boskoop)
  • 50 g sugar
  • ½ tsp cinnamon
  • 2 eggs
  • 3 tbsp milk
  • 1 tbsp sugar
  • 1 tbsp pudding powder, vanilla flavor

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

Knead the flour, butter, sugar, egg, and grated lemon zest into a shortcrust pastry and chill for one hour. Line the bottom and sides of a springform pan with the dough, reserving some for the lattice. Peel the apples, cut them into pieces, and mix them with the sugar and lemon juice. Prick the pastry base several times with a fork, then arrange the apples on top. Whisk the eggs with the milk, sugar, and custard powder and pour over the apples. Roll out the remaining pastry and cut into strips using a pastry wheel. Arrange it on top of the cake in a lattice pattern. Bake at 200°C for about 50 minutes.
