Ingredients for 1 servings:
- 75 g sugar
- 1 tbsp lemon peel, untreated
- 3 tbsp lemon juice
- some cinnamon powder
- 500 g apples, sour, chopped
- 200 g butter, soft
- 150 g sugar
- 4 eggs
- 1 tbsp lemon peel, untreated
- 200 g flour
- Fat for the mold
- some powdered sugar for sprinkling
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 25 minutes
For the filling, bring 200 ml of water to a boil with the sugar, lemon zest, lemon juice, and cinnamon. Add the finely chopped apples to the liquid and simmer for 2 minutes. Turn off the heat, drain the apples in a sieve, and let them cool. For the pastry, cream the butter and sugar until light and fluffy, add the eggs and lemon zest, and mix well. Finally, stir in the flour. Preheat the oven to 175 °C and grease a 24 cm springform pan. Pour half of the batter into the springform pan, spread the drained apples on top, and pour the remaining batter on top. Bake on the lowest rack for about 40 minutes and sprinkle with powdered sugar before serving.
