very tasty and airy apple pancake variation

Separate the eggs. Whisk the egg yolks with the flour, vanilla sauce, baking powder, milk, a pinch of salt, and a little sugar to form a smooth batter. Beat the egg whites until stiff and fold into the batter. Core and peel the apples and cut them into rings. The thickness of the slices depends on the firmness of the apple variety. If the slices are too thick, some batter will be left over, but this can be fried like a regular pancake. Heat plenty of oil in a pan. Dip the apple rings in the batter and then fry them in the pan. The apple rings are best served warm and can be decorated as desired. I eat them sprinkled with cinnamon sugar.
