Apple rusk casserole

Ingredients for 4 servings:

  • 1 pt. rusks (coconut rusks), 225 g
  • 250 ml milk
  • 800 g apples
  • 125 g sugar
  • 1 tsp cinnamon
  • 3 eggs
  • 250 ml sour cream
  • 50 g breadcrumbs
  • 40 g butter
  • 250 ml sauce (custard)

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Drizzle the rusks with milk. Wash and coarsely grate the apples. Mix half of the sugar and cinnamon with the apples. Whisk the eggs, sour cream, and the remaining sugar and cinnamon. Layer the rusks and apples in a greased baking dish, with rusks at the bottom, then apples, then rusks again, then apples, and so on. Finish with the rusks. Finally, pour the beaten eggs over the top, sprinkle with breadcrumbs, and dot with butter. Bake at 200°C for 25 minutes. Serve with vanilla sauce.
