Bread casserole with poppy seeds and apricots

Ingredients for 4 servings:

  • 3 baguettes (baguette rolls), 175 g each
  • 5 eggs
  • 500 g yogurt, vanilla
  • 1 tbsp vanilla sugar
  • 1 can/n apricot(s), 475 g
  • ½ point poppy seeds (poppy seed baking), 125 g
  • 2 tbsp powdered sugar

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Cut the rolls into cubes. Whisk together the eggs, yogurt, and vanilla sugar. Drain the apricots in a sieve and halve them. Combine the bread cubes, apricots, and half of the egg-yogurt mixture and place in an ovenproof dish. Sprinkle the poppy seed paste on top with a teaspoon. Pour the remaining egg-yogurt mixture over the bread. Bake in a preheated oven at 175°C for about 30 minutes. Serve lukewarm, dusting with powdered sugar just before serving.
