Ingredients for 1 servings:
- 2 large eggs, separated
- 100 g sugar
- 90 g semolina (durum wheat semolina)
- 90 g flour (add a little more liquid if using whole grain flour)
- 1 packet of baking powder
- 25 g nuts, ground
- 1 tsp, smothered cinnamon
- 5 tbsp rum
- 5 tbsp milk (or more if using whole wheat flour)
- 50 g raisins if needed
- 3 m.-sized apples
- 2 tbsp, heavy cream
- possibly grease for the mold
Instructions

Juicy, tasty and low in fat – quickly prepared
Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Beat the egg yolks with the sugar, cinnamon, and rum until frothy. Mix the flour, baking powder, semolina, and nuts well, then fold into the egg yolk mixture along with enough milk to form a thick batter. Carefully fold in the beaten egg whites and, if desired, raisins. Pour the batter into a greased or lined springform pan. Peel and core the apples, if desired, and cut them into thin wedges. Arrange them fan-shaped on top of the batter and press down lightly. Brush with cream. Bake in a preheated oven at 200°C (top/bottom heat: 180°C) for 30 to 45 minutes. Let cool in the pan for at least 10 minutes.
