Apple Soda Cake
The perfect apple soda cake recipe with a picture and simple step-by-step instructions.
- 1 kg Apple boskop
- 330 ml Sprite (lemon soda)
- 4 tbsp Sugar
- 2 tbsp Food starch
- 150 g Flour
- 1 tsp Baking powder
- 150 g Sugar
- 100 g Soft butter or margarine
- 2 Eggs
- 1 pinch Salt
- Fat and breadcrumbs for the mold
- Peel, quarter and core apples and cut into wedges. Mix the starch, 4 tbsp sugar and 40 ml lemonade until smooth. Bring 250 ml lemonade to the boil. Stir in the starch and bring to the boil again. Simmer for 2-3 minutes. Add apple wedges, remove pan from heat.
- Preheat the oven to 200 ° C. Grease a springform pan (26 cm Ø). Mix the butter, 150 g sugar and salt until creamy. Stir in eggs one at a time. Mix the flour and baking powder and stir into the butter and sugar cream with 4 tablespoons of lemonade.
- Fill the dough into the mold and smooth it out. Spread the apple compote evenly on top. Bake the cake in the hot oven on the lowest rack for about 45 minutes. Then reduce the oven temperature to 175 ° C. If necessary, cover the cake with baking paper and bake for another 30 minutes (chopsticks test!). Take out the cake and let it rest in the tin for about 10 minutes. Carefully lift out of the mold and let cool down. Dust with powdered sugar to serve.
