Apple whole-grain muffins

Ingredients for 1 servings:

  • ½ cup(s) Flour, whole grain
  • 2 cups oatmeal
  • 1 cup grains or seeds of your choice
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 tbsp maple syrup
  • 5 apples
  • 2 eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • Grease for the mold or paper baking cups

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

with apples, seeds and no sugar, 1 cup = approx. 250 ml. Makes approx. 16 pieces.

First, in a large bowl, combine the flour, baking powder, baking soda, salt, oats, and seeds (I used sunflower seeds, pumpkin seeds, and chia seeds). Then, in a smaller bowl, whisk the eggs and stir in the vanilla extract and buttermilk. If you don’t have buttermilk, you can use regular milk with a splash of vinegar. Peel and grate the apples and add them to the dry ingredients along with the egg mixture. Mix everything briefly with a wooden spoon and fill the muffin tins, either greased or lined with paper baking cups. The muffins won’t rise much, so they can be filled with plenty of flour. Bake for 20-25 minutes at 180°C (top/bottom heat).
