Apples with meringue topping

Ingredients for 4 servings:

  • 5 apples
  • 90 g sugar
  • 250 ml water
  • 250 ml white wine
  • 3 tbsp cognac
  • 50 g raisins
  • 20 g butter
  • 3 egg whites
  • 75 g sugar
  • 1 vanilla sugar
  • 20 g almond flakes or almond sticks

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

Preheat the oven to 190°C (top/bottom heat). Grease a baking dish. Peel, halve, and core the apples, then steam them with sugar, wine, water, and cognac until they are easily pierced with a skewer. Place the apples in the baking dish, sprinkle with raisins and pieces of butter, and place the dish in the hot oven for about 5 minutes. Meanwhile, beat the egg whites until stiff peaks form, gently folding in the sugar. Cover the steamed apples with the mixture, sprinkle with almonds, if desired, and return the dish to the oven for another 15-20 minutes, until the meringue turns a dark yellow color.
