Apricot and almond spread

Ingredients for 1 servings:

  • 100 g apricot(s), dried, unsulphured
  • 120 ml orange juice, freshly squeezed
  • ½ tsp orange peel, grated
  • ½ tsp lemon zest, grated
  • 50 g almonds, freshly ground
  • 2 g ginger root, finely grated

Instructions

Working time approx. 10 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 10 minutes

Soak the apricots in the orange juice overnight (about 8-12 hours). Remove the apricots from the orange juice and purée them in a blender. Add the remaining ingredients and purée everything until creamy. If the mixture is too thick, simply add 1-2 teaspoons of the orange juice used for soaking. I usually don’t need more than 1-2 teaspoons. The ginger isn’t overpowering; it blends beautifully with the other flavors. If you like ginger, you can increase the amount slightly. Tip: It’s best to always prepare and enjoy the spread fresh. Stored in a clean screw-top jar, the spread will keep in the refrigerator for about 4 days.
