Ingredients for 1 servings:

  • 600 g apricots
  • 500 g carrot(s), finely grated
  • 1 lemon(s)
  • 1 kg gelling sugar, 1:1

Working time approx. 30 minutes; Total time approx. 30 minutes

Apricot – Carrot – Jam

Briefly immerse the apricots in hot water, then plunge them into cold water and peel off the skins. Halve the apricots, remove the stones, and then finely puree them. Place them in a saucepan with the grated carrots. Squeeze the lemon and add the juice. Add the gelling sugar and mix well. Bring to a boil while stirring and simmer for about 6 minutes. Test for setting. Pour into clean jars while still boiling hot and seal immediately. Makes approximately 8 jars, each 200 ml.
