Apricot Chia Balls

Ingredients for 1 servings:

  • 400 g apricot(s), dried
  • 20 g coconut flakes
  • 80 g peanut butter
  • 60 g honey
  • 1 tbsp cocoa powder
  • 35 g sesame seeds
  • 125 g sunflower seeds
  • 40 g chia seeds
  • 90 g oat flakes
  • Water, hot

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Place half of the apricots in a bowl, cover with hot water, and soak for 15 minutes. Drain the water and blend the apricots with the coconut flakes, peanut butter, honey, and cocoa powder in a food processor or with an immersion blender until a paste forms. Finely chop the remaining apricots and add them to the paste along with the sesame seeds, sunflower seeds, chia seeds, and oats. Mix thoroughly. Line a baking sheet with parchment paper. Scoop out teaspoon-sized portions of the apricot mixture and, with wet hands, shape them into approximately 60 balls. Place them on the parchment paper. Let them set in the refrigerator for at least 1 hour. The balls will keep in an airtight container in the refrigerator for approximately 1 month.
