Apricot curry

Ingredients for 4 servings:

  • 600 g turkey breast or pork
  • 1 gr. can/n apricot(s)
  • 1 tbsp curry
  • salt and pepper
  • 1 tbsp sugar
  • oil
  • 1 onion(s)
  • possibly sauce thickener, light

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the meat into small pieces and the onion into cubes. Drain the apricots, reserving the juice. Cut each apricot in half three times. Fry the onions in a pan until translucent, then add the meat and fry. Season with salt and pepper. Sprinkle curry powder over the meat. Push the meat to the side, add the sugar to the center, and let it caramelize slightly. Add the apricots and pour in enough juice to just cover everything. Let it simmer for 10 minutes. Season to taste. If you like it very spicy, add more curry. If the sauce is too runny, thicken with a little sauce thickener. Serve with rice and salad. If you make it less spicy, the dish is also suitable for children.
