Quick potato soup

Ingredients for 4 servings:

  • 1 leek(s)
  • 2 large carrots
  • 1 tbsp oil
  • 2 tbsp vegetable broth, instant
  • 4 sausages (Wiener)
  • 1 sachet of mashed potato powder (3 servings for 1/2 l of liquid)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim and wash the leek, then slice it into rings. Peel and slice the carrots. Heat the oil, add the vegetables, and sauté briefly. Pour in 1 1/4 liters of water, bring to a boil, stir in the broth, and simmer for about 10 minutes. Then stir the puree powder into the soup, slice the sausages, and add them. Bring to a boil, simmer for 1-2 minutes, and season with salt and pepper. Serve sprinkled with chopped parsley.
