Swabian plum dumplings

Ingredients for 4 servings:

  • 500 g plums
  • 250 g white bread, diced (stale from the day before) or rolls
  • ¼ liter milk (hot)
  • 80 g flour
  • 3 eggs, (M)
  • 1 pinch of salt
  • Oil or lard for frying
  • powdered sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Wash the plums and dry them. Pit and cut into small pieces. Place the white bread cubes in a bowl, pour over the hot milk, and let stand for about 15 minutes. Then squeeze the bread cubes well, discarding any excess liquid. Add the flour, eggs, salt, and the plum pieces and mix everything well with a wooden spoon. Using a tablespoon, scoop out long dumplings (Knöpfle) from the mixture and fry them in hot lard or oil in a deep pan. You can eat the Knöpfle on their own, dusted with powdered sugar, or with melted butter or cold vanilla sauce.
