Apricot Jam with Schwips

  • 1250 g Apricots fresh
  • 1 Fresh lime
  • 500 g Preserving sugar 2: 1
  • 4 Centiliters Apricot liqueur
  1. Wash the apricots, dry them, remove the stones and cut them into small pieces. The amount should be 1000 g. Squeeze the lime. Put the apricot and lime juice in a large saucepan. Mix well with the preserving sugar.
  2. Bring the whole thing to a boil while stirring. Keep stirring and simmer for 4 minutes over high heat. Take off the stove.
  3. Stir the apricot liqueur into the jam. Immediately pour the jam into prepared twist-off glasses while hot, close and turn upside down. Turn glasses over after 15 minutes.
