Apricot Jam with Schwips

- 1250 g Apricots fresh
- 1 Fresh lime
- 500 g Preserving sugar 2: 1
- 4 Centiliters Apricot liqueur
- Wash the apricots, dry them, remove the stones and cut them into small pieces. The amount should be 1000 g. Squeeze the lime. Put the apricot and lime juice in a large saucepan. Mix well with the preserving sugar.
- Bring the whole thing to a boil while stirring. Keep stirring and simmer for 4 minutes over high heat. Take off the stove.
- Stir the apricot liqueur into the jam. Immediately pour the jam into prepared twist-off glasses while hot, close and turn upside down. Turn glasses over after 15 minutes.
