Apricot Riesling Jam

Ingredients for 1 servings:

  • 1,000 g apricot(s), ripe, pitted weighed
  • 560 g sugar
  • 75 ml white wine (Riesling)
  • 4 tbsp lemon(s), the juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Wash, pit, and chop the apricots, then place them in a large saucepan. Add the sugar, Riesling, and lemon juice and stir. Bring to a boil, stirring frequently. Once boiling, reduce the heat and simmer for about 25 minutes, stirring frequently to prevent sticking to the bottom of the pan. After this time, test for settling. If the jam isn’t ready, simply continue simmering and repeat the settling test a little later. Then pour into sterilized jars and immediately close the lids. I made five 200ml jars.
