Ingredients for 6 servings:

  • 1 kg turkey or chicken
  • Salt
  • 1 lemon(s), zest and juice
  • 1 tsp, heaped cinnamon
  • 1 tsp, heaped paprika powder, sweet
  • 1 tsp, heaped chili flakes
  • 1 tsp, heaped cardamom
  • 1 tsp, heaped coriander
  • 1 tsp, heaped ginger powder
  • some saffron threads or a tin of ground
  • 200 ml olive oil
  • 4 garlic cloves

Instructions

Working time approx. 15 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 12 minutes; Total time approx. 8 hours 27 minutes

unusually marinated meat for grill and oven

Mix all the ingredients for the marinade together. Cut the meat into 2-3 cm cubes. Place in a bowl and season well with salt. Mix with the marinade and let it marinate for at least 8 hours. Thread the meat cubes onto skewers and grill for about 10-12 minutes on the charcoal grill, turning frequently. This can also be done in the oven; adjust the grilling time accordingly.
