Spicy barbecue marinade for chicken breast fillets à la Gabi

Ingredients for 4 servings:

  • 4 medium-sized chicken breast fillets
  • 6 tbsp olive oil
  • 1 tsp curry powder (Madras curry)
  • ¼ tsp lemon zest, grated
  • ¼ tsp orange peel, grated
  • 1 tbsp Ras el Hanout
  • Salt
  • Black pepper, freshly ground

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 20 minutes

Mix the olive oil with the spices, add the chicken breast fillets, and marinate in the refrigerator for 1 hour, covered. Dry off the marinade slightly before grilling, season the meat with salt, sear on both sides, and cook over low heat for 5-7 minutes.
