Arugula, Parma, and Cauliflower Pizza

Ingredients for 1 servings:

  • 250 g cauliflower
  • 200 g cheese, grated
  • 1 egg(s)
  • ½ tsp garlic salt
  • 1 tsp Italian herbs
  • 4 cloves garlic
  • 200 g cherry tomatoes
  • 100 g arugula
  • 3 tsp olive oil
  • 100 g Parma ham
  • 125 g cherry tomatoes, pureed
  • 2 tbsp tomato paste
  • ½ small onion(s)
  • ½ tsp thyme
  • ½ tsp oregano
  • ½ tsp rosemary
  • ½ tsp basil
  • salt and pepper
  • e.g. Parmesan, sliced

Working time approx. 40 minutes; Cooking/baking time approx. 17 minutes; Total time approx. 57 minutes

Low-carb

First, prepare the pizza topping. Wash the arugula, trimming any thick stems if necessary and letting them drain. Halve the cherry tomatoes, quarter them if necessary, and add them to the arugula. Crush in 2 teaspoons of garlic and mix everything together. As soon as the cauliflower base goes in the oven, add 2 teaspoons of olive oil and season with salt and pepper. For the cauliflower base, preheat the oven to approximately 230°C (fan oven). Remove all stems and leaves from the cauliflower and cut the cabbage into small pieces. Chop with an immersion blender until it resembles semolina, but don’t want it to be too mushy. Then cook in the microwave at 600 watts for about 8-10 minutes without adding any water (but you can also cook it briefly in a water bath on the stovetop). Mix the cooked cauliflower with the egg and 200g of grated cheese to form a dough. I usually just do this with a fork. Season with the Italian herbs, 1 teaspoon of crushed garlic, and the garlic salt. Spread the dough (= pasty mass) on a baking sheet lined with baking paper and press it down with a fork to create a nice shape. Then bake in the hot oven for about 15 minutes. While the dough is sizzling in the oven, prepare the pizza sauce. To do this, puree the passata with 1 crushed garlic clove, the onion, 1 teaspoon of oil, and the spices until smooth. I use a hand blender for this. Season with salt and pepper. Remove the finished dough from the oven and brush with the pizza sauce. Then return it to the oven for another 1-2 minutes. Remove the pizza from the oven and top with the Parma ham. Finally, we spread our pickled arugula and tomato salad on the pizza. For a delicious topping, sprinkle the pizza with shaved Parmesan cheese, if desired.
