Arugula salad with goat cheese and cherry dressing

Ingredients for 8 servings:

  • 400 g arugula
  • 1 radicchio
  • 250 g cheese, goat cheese roll
  • 500 g cherries (sweet cherries)
  • 8 tbsp olive oil
  • 6 tbsp port wine
  • 4 tbsp vinegar (red wine vinegar)
  • 4 tbsp maple syrup
  • Salt and pepper, from the mill
  • 150 g Parma ham, thin slices

World’s best summer salad!

Here I present to you my absolute favorite salad for cherry season!! Clean and wash the arugula. Halve the radicchio and remove the stalk. Cut the radicchio into strips and soak them in lukewarm water for 10 minutes to draw out the bitterness. Cut the goat cheese into slices about 2 cm wide. I recommend the Camembert-like version rather than the creamy one! Wash, pit, and halve the cherries. Mix together the olive oil, port wine, vinegar, and maple syrup and season with salt and pepper. Add the cherries. Let everything marinate for about 20 minutes. Arrange the arugula, radicchio, Parma ham, and goat cheese decoratively on a platter and drizzle evenly with the dressing.
