Ingredients for 4 servings:
- 750 g chicken breasts
- 2 bananas
- 1 lemon(s)
- 150 g peanut butter, crunchy, preferably unsweetened
- 1 bunch of spring onions
- 1 tbsp soy sauce, light
- 1 tbsp sambal oelek
- 2 tbsp Tabasco, green
- 4 tbsp oil (olive oil)
- 2 cloves garlic
- 1 mango(s)

Cut the meat into thin strips. Marinate with soy sauce, olive oil, sambal, and Tabasco for at least 2 hours. Cut the mango and banana into fairly small cubes (so they don’t overcook). Pour over the lemon juice, add the chopped garlic, and let it simmer for another two hours. It’s best to fry the meat in a very hot wok over a constant high heat for 5 minutes, until all the pores are closed. Add the onion, stir-fry for a few more minutes, then add the peanut butter. Mix everything well, adding a little water if it’s too thick. Finally, over low heat, add the fruit and garlic. Stir briefly, about 1 minute, until hot. Do not add any salt to the dish! If you still want a salty flavor, you can vary the rice.
