Asparagus cake

Ingredients for 4 servings:

  • 450 g puff pastry, frozen
  • 750 g asparagus, white, peeled
  • 150 g bacon, diced
  • 1 mozzarella
  • 3 eggs
  • 3 tbsp white wine
  • 150 ml sweet cream
  • salt and pepper
  • Broth, granulated
  • Sugar
  • curry powder
  • Parsley

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the asparagus into pieces and cook in salted water with a little sugar for 15 to 20 minutes until al dente. In the meantime, thaw the puff pastry in individual slices. Lightly fry the bacon in a pan. Cut the mozzarella into small cubes. Preheat the oven to 220 degrees Celsius. Drain the asparagus well. Line the bottom of a springform pan (28 cm diameter) with the puff pastry and form a rim about 4 cm high. Spread the asparagus, bacon, and mozzarella over the pastry and pre-bake in the oven for 10 minutes. In the meantime, whisk together the eggs, cream, and wine, and season to taste with the spices. Pour the topping into the pan and bake for another 25 minutes.
