Asparagus Couscous Salad

The perfect asparagus couscous salad recipe with a picture and simple step-by-step instructions.

  • 500 g Asparagus green fresh
  • 100 g Couscus
  • 2 Piece Red peppers
  • 3 Pc. Spring onions
  • 200 g Poultry sausage
  • 0,5 Can Corn grains
  • Salt and sugar
  • Pepper from the grinder
  • Oil
  • Vinegar

That’s how it’s done :

  1. Remove the woody end of the asparagus and cut into bite-sized diamonds, place in a saucepan and cook with a little salt and sugar until al dente, drain and rinse in cold water. Save the asparagus water. Cut the meat sausage into small cubes, cut the paprika into fine strips, and the spring onions into fine rings. Fry the meat sausage in oil, add the paprika and finally the spring onions. Let the coscous soak in hot salted water (see cooking instructions). Add the meat sausage, paprika, onions, corn and couscous to the asparagus, stir well and season with salt and pepper. Lightly acidify the asparagus water with a little vinegar and fold approx. 100 – 150 ml into the salad. Let everything steep for about 30 minutes and serve lukewarm.
