Ingredients for 4 servings:
- salt and pepper
- 300 g turkey breast
- 500 g asparagus
- 150 g mushrooms, small
- 150 g cherry tomatoes
- 150 g spring onions
- 2 tbsp oil
- 100 ml cream
- 1 tsp lemon juice
- 4 slices of farmhouse bread (large)
- 50 g cheese, grated
- Paprika powder, sweet
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the asparagus and halve it lengthwise. Trim and finely chop the mushrooms. Slice the spring onions into rings and halve the tomatoes. Heat 1 tablespoon of oil and fry the asparagus in batches for about 5 minutes. In another pan, fry the turkey meat, cut into strips, season with salt and pepper, and remove. Sauté the mushrooms in the turkey breast fat for 2-3 minutes, add the spring onions and tomatoes. Sauté for another minute. Pour in the cream and bring to a boil. Add the meat and season with salt, pepper, paprika, and lemon juice. Line a baking tray with baking paper. Place the slices of bread on top. Place the asparagus on the slices of bread. Spread the shredded meat evenly on top and sprinkle with cheese. Bake in a preheated oven (electric oven: 225°C / 200°C fan; gas mark 4) for about 10 minutes.
