Asparagus Pie

The perfect asparagus pie recipe with a picture and simple step-by-step instructions.

  • 500 g Fresh asparagus, peeled and thinly sliced
  • 350 g Baguette, cut into approx. 1 cm thin slices
  • 100 g Cooked ham
  • 150 ml Cream Fine 7%
  • 3 Pc. Eggs
  • 100 g Finely grated mountain cheese
  • 1 tbsp Fresh herbs, finely chopped
  • 1 pinch Salt and pepper
  1. Cook the asparagus with a pinch of salt, sugar and a squeeze of lemon juice for about 5 minutes. Catch a cup of cooking water and pour it into a sieve.

for the cream

  1. Crumble the eggs with Creme Fine, season with salt, pepper and herbs, add half of the cheese and stir with a little cooking water until smooth.
  2. Lightly grease a round casserole dish, line it with half of the baguette and top it with the ham. Spread the asparagus on the ham and cover with the remaining baguette. Then pour the cream over it and sprinkle with the rest of the cheese. Bake the cake at approx. 175 degrees top and bottom heat for approx. 30 – 40 minutes until it is nice and golden brown and crispy.
