Asparagus with Egg
The perfect asparagus with egg recipe with a picture and simple step-by-step instructions.
1 egg per serving
- 50 g Backon / 1 slice per asparagus bunch
- 2 Pc. Cooked potato
- Chives or spring onions, fresh parsley.
- Salt pepper
- Oil to fry
- Peel the potatoes and cut into small pieces, boil them in salted water until soft. -In between peel the asparagus and cook for 8-10 minutes (not too soft).
- Put the potatoes in a heated pan with oil and fry lightly. Season to taste with salt and pepper.
- Wrap cooked asparagus / 3-5 pieces / with the bacon and fry in a pan until crispy. Take out. Fry the eggs in the pan. As you like .. Simple mirror type eggs.
- Set up nicely with diced boiled potatoes with sliced spring onions on the plate. Sprinkle with finely chopped parsley and spring onions. 1 slice of toast bread with it.
- Fine breakfast or snack.
