Asparagus with Rhubarb Dressing

The perfect asparagus with rhubarb dressing recipe with a picture and simple step-by-step instructions.

  • 1 kg Fresh asparagus
  • Salt
  • 3 Poles Fresh rhubarb
  • 1 Lemon fresh
  • 2 tbsp Grapeseed oil
  • 1 tbsp Freshly chopped chives
  • 2 pinch Sugar
  1. Peel the asparagus and just remove the ends. Cook the sticks with a pinch of sugar in boiling salted water for about 10 minutes until al dente, then drain. Grate and squeeze the lemon. Wash, peel and dice the rhubarb. Sauté in grapeseed oil, deglaze with lemon juice and add zest. Let cool down. Add sugar and chives to the rhubarb, mix well and season to taste. Serve the asparagus with the fruity dressing. Good Appetite
