Mix the flour, powdered sugar, vanilla sugar, and milk well. Then bring the mixture to a boil with the butter in a saucepan, stirring constantly, and allow to thicken. Set the pan aside. Melt the chocolate in a double boiler, stir it into the mixture, then let it cool. Separate the eggs and stir the egg yolks into the mixture. Beat the egg whites until stiff peaks form and fold them in carefully, taking care not to collapse the mixture. It should look marbled. Preheat the oven to 200°C (top/bottom heat). Pour the batter into 5 buttered tins and bake for 20 minutes. You can also bake the mixture in a large tin, but the baking time will increase accordingly. Whip the cream, adding a splash of orange liqueur, if you like. Serve the cream with the casserole. Purée the raspberries with powdered sugar to taste and pass them through a fine sieve. Serve with the casserole as a mirror. Tobias prepared this recipe as a dessert in the show “The Perfect Dinner” – Day 3 from Frankfurt – on Wednesday, February 17, 2021.
