Autumnal lamb's lettuce with apples and hazelnuts

Ingredients for 4 servings:

  • 200 g lamb’s lettuce
  • 1 large apple
  • 80 g hazelnuts
  • 30 g butter
  • 2 tbsp honey
  • 50 g yogurt
  • some pepper
  • 1 carnation(s)
  • 2 tbsp vinegar, e.g. raspberry or apple cider vinegar

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Trim and wash the lamb’s lettuce thoroughly, then place it in a colander to drain. Cut the apple into small pieces and add it to the salad bowl. Melt the butter in a pan, add the nuts, and simmer briefly over low heat. Stir in the honey, bring to a boil, and caramelize the nuts slightly. Stir in the cloves and yogurt and season with pepper. Turn off the heat and add the vinegar to the dressing. Add this to the apples, mix well, and let it stand. Once the salad dressing has cooled, fish out the cloves, add the lamb’s lettuce to the bowl, and mix everything well.
