Ingredients for 6 servings:

  • 1 head of lettuce, some large leaves
  • 3 avocados
  • 1 tsp paprika powder
  • 3 carrots
  • 2 tbsp lemon juice
  • 2 onions, chopped
  • 1 garlic clove(s), chopped
  • some salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel and pit the avocados, and mash them with a fork. Peel and grate the carrots. Add most of them to the avocados along with the onions and garlic. Add lemon juice, paprika, and a pinch of salt. Form the mixture into small balls. Roll them in the remaining carrots, arrange each one on a large lettuce leaf, and serve.
