Avocado French Toast

The perfect avocado french toast recipe with a picture and simple step-by-step instructions.

  • 1 small Fresh avocado
  • 2 tsp Lemon juice
  • 1 pinch Red chilli flakes
  • Salt
  • 3 Eggs
  • 150 ml Milk
  • 4 Discs Sandwich toast
  • 4 tsp Tomato pesto
  • 1 tbsp Clarified butter
  1. Halve the avocado, remove the stone and spoon the pulp out of the skin. Mash as finely as possible in a bowl with a fork. Season with lemon juice, chilli flakes and salt.
  2. Mix eggs and milk in a casserole dish and season with salt. 2 slices of toast, first brush with 2 teaspoons of tomato pesto each, then with avocado cream. Cover each with another slice of toast. Place the sandwiches in the egg milk and let them steep for 3-4 minutes on each side until the egg milk is completely absorbed.
  3. Heat the butter lard in a coated pan, add the sandwiches and fry on each side for about 5 minutes on each side over a medium heat. Drain on kitchen paper and serve immediately.
