Bagel with grilled cheese, guacamole and sun-dried tomatoes

Ingredients for 1 servings:

  • 1 bagel
  • ½ avocado(s)
  • ½ lime(s), juice
  • 3 tomatoes, dried
  • 1 serving of grilled cheese, plain, with herbs or chili as desired
  • 1 handful of arugula
  • ¼ bell pepper(s), color as desired, I used yellow
  • salt and pepper
  • some chili pepper(s), fresh

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

simple, quick and vegetarian

First, prepare the grilled cheese in a pan or on the grill. Meanwhile, wash the arugula and bell peppers, then add the bell peppers to the pan or grill. For the simple guacamole, mash half an avocado in a bowl with a little lime juice, season with salt and freshly ground pepper, and add a bit of fresh chili, if desired. Cut the sun-dried tomatoes into 3-4 strips. Halve the bagel in half and warm it briefly on the grill. Fill the bagel with all the ingredients and serve immediately.
